Origin & culture

Rhine Sunset is our signature original: citrus, bubbles and espresso form a horizon-like gradient that echoes Rhine’s sail and water symbol. The acidity is functional, brightening coffee sweetness rather than serving only the photograph.

The visual idea is the last light of sunset on water: orange purée below, clear bubbles as the surface and espresso descending like dusk. The goal is not a permanent stripe but a brief gradient that stirs into a balanced citrus-sparkling coffee.

This open recipe is designed for home equipment. Adjust extraction slightly for your beans, water and machine.

Method

  1. Build the sunset base

    Place purée in a clear glass and add ice along the wall without disturbing it.

  2. Add the water layer

    Slowly pour sparkling water over the ice to preserve bubbles and separation.

  3. Float the espresso

    Rest espresso for 20 seconds, pour close to the ice, then stir before drinking.

Barista variations

Stabilize the standard recipe first, then use these controlled changes to tune sweetness, body and aroma. Each variation explains both the change and its effect.

Grapefruit dawn

Replace orange with 20 g ruby grapefruit pulp plus 5 g honey and use medium-light espresso. Honey bridges peel bitterness and coffee.

Tonic twilight

Use 100 g tonic, reduce purée to 15 g and add no sugar. Quinine links with espresso for a drier aperitif profile.

If it tastes

Gradient vanishes immediately

Adjust the next cup

Chill soda and glass, rest espresso 20 seconds and pour onto ice rather than toward the purée.

If it tastes

Sour and bitter after stirring

Adjust the next cup

Reduce purée by 5 g or use a sweeter, properly extracted shot; syrup will not solve both faults.
